the way we eat has changed more in the last 50 years than in the previous 10th but the image that used to sell the food it is still the imagery of agrarian America you going to the supermarket and you widely and on a large scale has all unintended consequences when McDonald's is the largest purchaser of I'm beef in United States and they want their hamburgers to taste every where exactly the same they change how ground beef is produced the McDonald's corporation is the largest purchaser of potatoes in one of the largest purchasers pork chicken tomatoes lettuce even apples  these big big fast food chains want big suppliers I now there are essentially a handful of companies controlling our food system in the 1970s the top 5 beef Packers controlled only about 25% of the market  today the top 4 control more than 80% of the market the same thing happening now in pork even if you don't eat at a fast food restaurant your now eating meat this being produced by this system you look at the labels and you see farmer this farmer that it's really just three or four companies they're controlling the meat we've never had food companies this big and this powerful in our history  Tyson Chapel is the biggest Meat Packing Company in history of the world the industry change the entire way the chicken or raised birds are now raised and slaughtered in half the time they were 50 years ago but now they're twice as big  people like to eat white meat so they redesign the chicken to have large breasts  they not only change the chicken they change the farmer today chicken Farmers no longer control their Birds a company like Tyson owns the birds today they're dropped off until the day that they're slaughtered I go to the top National chicken Council industry has really set a model for the integration of production and processing and marketing of the products that other Industries are now following because they CW the chief tremendous economies the way or not producing chickens of upgrades for new equipment and the has no choice they have to do it or you're threatened with loss of a contract  this is how they keep the farmers under so it's how they keep them spending money going to the bank and borrowing more money and the debt just keeps building no say in your business and it's degrading if it's like being a slave to the company the idea that you would need to write a book telling people where their food Trump is just a sign of how far removed we become  six to me that we're entitled to know about our food who owns it how are they making can I have a look in the kitchen  you know when I wanted to understand the industrial food system what I said about doing was very simple I wanted to trace the source of my food when you go through the supermarket what looks fail  Kevin received his first dialysis treatment he was not allowed to really drink water we had these little sponges and we were allowed to dip that in cup of water and then give him that  and she  bit the head off of 101 you've never seen someone fake he paid for water it was all he could talk about it wouldn't let anybody bring any any reach into the room because he knew it was all he would talk about  water I don't know if you knew what was happening to him and  I hope I don't know to watch this beautiful child go from being perfectly healthy to dead in 12 days  it was just unbelievable that this could happen from eating food  what was even kind of adding more insult to injury it took us almost two or three years and higher private attorney to actually find out that we matched meat recall on August 1st my son was already in the hospital they did a ecoli test of the plant that was Paz they didn't end up recalling that meet until August 27th 16 days after he died sure we will I'd for a Smithfield box it was about A5 hour drive maybe 3 400 miles so it's worth it  I have no desire to scale up or get bigger my desire is to be best food in the world and heal and if in doing so more people come to our corner and one stuff then Heaven help me figure out how to meet the need without compromising the integrity.
